A simple Super Bowl appetizer: black bean, corn, and cheese dip

Super Bowl is fast approaching and it is time for appetizers! The absolute best thing about any football game or any huge sporting event is 100 percent the food, am I right?

This dish is a go to dish to have in her arsenal because it’s so versatile. Also, so cheap! I mean relatively. It’s cream cheese, black beans, corn, scallions cheddar cheese. And you can customize it however you want.

If you want it spicier: simply add some pickled jalapeños.

Want it more saucy? Add a can of rotel.

Dislike scallions – leave them out!

Serve this warm or at room temp with tortilla chips or celery – yum!

Ingredients

  • 1 can corn, drained and rinsed

  • 1 can black beans, drained and rinsed

  • 1 tablespoon taco seasoning

  • 1 tablespoon oil

  • 4 scallions (plus more for topping)

  • 1 cup cheese (cheddar, Monterey jack, etc.)

  • 1/2 t. salt

Directions

  • Cut scallions into small pieces. Add to a pan with 1 tablespoon of oil, add in the drained and rinsed corn. Saute for a few minutes. Add 1/2 teaspoon salt.
  • Add in the black beans and taco seasoning.
  • Stir in the cream cheese and shredded cheese. Mix until incorporated.
  • Transfer to serving dish and serve with chips. Enjoy!

Notes

  • Customize this by adding in jalapenos or a can of rotel. Tis is a basic dip recipe that can be easily adapated.
