One pot pasta dish: chicken, sun dried tomato, spinach and cheese pasta

Weeknights are tough. Whether you’re working. Whether you’re a stay at home. Whether you are not a parent whether you are just a human being on earth. Dinners and weeknights can be tough. A nice when I don’t feel like cooking, and I know that I want something nutritious. Something homemade, a one dish meal always comes to the rescue.

Start to finish this recipe took a total of 25 minutes. So remind yourself, in 25 minutes, you will be done with the one of the more annoying tasks of your day, and you can move on to other more fun things. For example, watching TV, playing on TikTok, walking your dog, hanging out with your kids.

While this recipe does have fours and cheese, heavy cream, and some Parmesan… It also has an entire tub of spinach. It’s all about balance, baby!

I like to cook this recipe in sequence and truly have it be a one pot dish.

Start with boiling your pasta… This can be any pasta that you have on hand. While the pasta is boiling, you can just press the rest of your ingredients. I start with cutting up my chicken thighs into bite-size pieces, and then I rinse my search. That’s the extent of the prep work needed!

After your pasta is done drain it put the pot back on the stove and sauté your chicken. I do this by adding 1 tablespoon of a neutral oil, like an avocado oil and then a sprinkle salt and pepper.

Cook that for about five minutes until the chicken is cooked through, stirring every few minutes. What is the chicken is cooked through now you add in your spinach. Let that cook down for probably 3 to 5 minutes until it’s completely wilted.

OK and I work the final steps. You just have to add in the recipe ingredients, which is a little bit of heavy cream, the Boursin cheese, Parmesan, a tablespoon of bouillon – and stir! Now add in your pasta.

It will seem running when you first at your pasta, but take it off the heat and let it sit for five minutes, and then your pasta dish will be beautifully ready to go. The remaining liquid will be absorbed into the noodles and what you’re left with is an incredibly creamy, simple and delicious meal.

Ingredients

  • 16 ounce box of pasta

  • 4 boneless, skinless chicken thighs, chopped into bite size pieces

  • 16 ounces fresh spinach (can sub frozen)

  • 1/2 cup sundried tomatoes, packed in oil

  • 1 circle of boursin cheese

  • 1/4 – 1/2 cup grated parmesan

  • 1/3 cup heavy cream (can sub any milk)

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 Tablespoon oil

Directions

  • Boil the pasta per instructions on the packaging, Drain and set-aside.
  • While the pasta is cooking, cut up your chicken thighs into bite size pieces & wash and drain your spinach (if using fresh)
  • To the same pan that held the pasta, add 1 tablespoon oil and the chicken thigh pieces. Add the salt and pepper and stir and cook until cooked through, about 3-5 minutes.
  • Once chicken is cooked, add in the spinach. Cook until wilted and cooked – stirring it a few times – about 3 minutes.
  • To the same pan, add the boursin, heavy cream, parmesan cheese and stir until incorporated.
  • Add the pasta and stir – remove from heat and let sit for 5 minutes to allow the liquid to be absorbed. Enjoy!
