Ginger Cilantro Salmon


Wow – it’s beautiful here in Columbus! 75 – sunny – amazing! And the funny part is….I was just in Miami for three days over the weekend for work and came back to Ohio with pretty similar weather. Loving it. Tonight’s meal is inspired by my trip to Miami….fresh seafood in a herbalicious flavor packed marinade.

Here are the ingredients you’ll need: salmon (7 to 8 ounces each), limes, cilantro, ginger, garlic, scallions, salt and pepper, and olive oil.

Simply grind all the ingredients together…you can use a mortar and pestle like I did – or use a food processor. It felt more authentic using the mortar and pestle so I just put some muscle into it and ground it into a paste. I recommend getting the garlic and ginger into a paste first (use some salt as an abrasive to help) then add in scallions and ginger, then finally the liquids.

After you get the marinade to the right consistency simply spread it over the fish and let the fish marinate for 2 hours in the fridge.

Remove from the refrigerator and allow to sit for 10 minutes at room temperature. Meanwhile, heat the grill to medium heat. Spray the grill with some kind of oil to help prevent the fish from sticking. Then lay the salmon on the grill for about 5 minutes on each side, or until cooked to the level that you like. Some people prefer their salmon to be more rare…so just reduce the cooking time. N is the grill master in our house…he cooked it perfectly!! So delicious.

I served it with some steamed brocolli and some white rice with caramelized onions for N.

Salmon with Cilantro Marinade

Serves 2

2 center cut salmon filets – about 7 ounces each
¼ c. cilantro – chopped
2 scallions – white parts only –chopped
1 inch piece of ginger – minced
Zest and juice of 1 lime
2 garlic – minced
1 t. salt
½ t. pepper
1 t. olive oil


  1. Using a mortar and pestle or a food processor – grind the garlic and ginger into a paste using ½ t. of salt as an abrasive to help grind together.
  2. Add in the chopped cilantro, scallions, and lime zest and continue to grind until a thick paste with a few large pieces of scallion and cilantro remaining.
  3. Add in the juice from 1 lime, remaining salt and pepper, and the olive oil.
  4. Spread marinade over the salmon fillets and refrigerate for 2 hours (covered).
  5. Heat grill to medium heat and grill salmon for 5 minutes each side, more or less depending on how you prefer your salmon.
  6. Sprinkle over a few sprigs of cilantro and serve with a lime wedge.
