I’ve been obsessed with the idea of these zucchini pizzas since I first started seeing their pictures popping up on pinterest. Obsessed! And let me just tell you this….they did not disappoint! I lucked out and had my little sister over to help me with these….she was my sous chef for the evening and I loved every second of it. We had gotten home late from some fun stuff we did….so by the time we started cooking we were starving and on the edge of crabbiness! Ha….but these cooked quickly and were so delicious….the crabbiness soon faded after our first bites!
Here’s what you’ll need:
And here’s what you do – slice the zucchini lengthwise into thin strips. You’ll see I also have eggplant in the picture – and that was so good too. Lay the veggies on a foil lined baking sheet and spray with canola spray and season with salt and pepper, red pepper flakes and some garlic salt. Place into a 400 degree oven and cook for 10 minutes – or until cooked through.
Remove from the oven and spread the pizza sauce on them. Alyse and I used 1 ½ T. on each – make sure you get one without a lot of sugar added to it. Next….sprinkle on the parmesan cheese.
Note: use real parmesan cheese. I learned that tip from Ellie Krieger – she says investing in a piece of parmesan is worth it because it has more flavor and you end up using less of it because of the high quality. And I totally agree with her. Less calories/more flavor….um, yes please!
Ok, after grating the parm, Alyse and I sprinkled half of the veggie “crusts” with the parm and the other half with low fat mozzarella cheese, then put our toppings on. I used turkey pepperoni and banana peppers – because that’s my favorite combo. Use your favorite ingredients on it. Seriously….they’ll all work. I promise.
Throw the baking sheet back in the oven for 5-7 minutes, or until the pizzas are all melty and delicious.
And finally it’s time to eat! Although – I must say – we were starving, so that night I wish I had taken the time to take better pictures, but we were just so hungry and it was late – so this is the best I got! Oh well….try resisting these guys….and you’ll see how hard it is too! Ha! Enjoy!
Ingredients:
2 large zucchini
1 c. pizza sauce
½ c. grated parmesan cheese
1 c. mozzarella cheese
40 slices turkey pepperoni (4 per piece)
Banana peppers
Salt and pepper
1/4 t. red pepper flakes
sprinkling of garlic salt
Directions:
- Preheat oven to 400 degrees.
- Slice the zucchini into lengthwise slices.
- Lay onto baking dish lined with foil and sprayed with cooking spray.
- Spray tops of zuke with cooking spray and sprinkle over salt and pepper, red pepper flakes, and garlic salt.
- Bake the zucchini in the oven until cooked through – between 7 – 10 minutes.
- Remove the zucchini from the oven and put the sauce, cheese, and any pizza toppings you’d like on to the zucchini.
- Bake for an additional 7 minutes, or until the cheese has melted.
Serve and enjoy!
