Asparagus Salad w. Lemon and Feta

I have a slight addiction to Pinterest….I don’t go on that often….but when I do it’s an guaranteed hour of looking through all the pins! I just love it. And I’ve found some pretty amazing ideas on there as well which is so fun. This recipe is inspired from a pin that took me to this blog.

Here’s what you’ll need – I can proudly say this is another recipe with just a few ingredients!

The recipe is simple and so tasty. I love asparagus – especially roasted in the oven so some parts get crispy. Yum. I also love feta and anything with acid – lemon juice, vinegar, and banana peppers are some of my favorite flavors! I tend to use more acid in dishes than most…so feel free to adjust to your tastes. Obviously. Ha!

This dish is easy to prepare…first things first, chop the hard ends off the asparagus. I just eye ball it – about an inch and a half off the bottom should be fairly accurate. It’s in season now – so it’s nice and fresh and tender which is great. Lay the asparagus on a baking sheet and sprinkle 2 t. of olive oil on top, ½ t. salt and ¼ t. pepper. Shake the pan to coat the asparagus evenly with the olive oil and seasoning. Place into a preheated 400 degree oven. The asparagus should cook for about 10 minutes – until fork tender and some parts of the asparagus are brown. According to Anne Burrell “brown = flavor” – and I couldn’t’ agree more!

Ok – after the asparagus is complete, I chopped them into bite size pieces. Then zest and juice 1 lemon and pour over the asparagus. And then the last step….sprinkle over the feta. I used reduced fat feta – not the most flavorful – but I told myself at the grocery that all store bought feta is not that great anyways – so I would save the full fat feta for next time I buy the good stuff at the Mediterranean store.

And that’s it – seriously! Toss the asparagus with the juice, zest, and feta – and you’re good to go!

The flavor is really tart from the lemon and the feta – which I just love. I accidentally ate the entire bowl– but how bad can it be to overeat vegetables? It’s definitely an improvement from my normal overeating! Ha!

Asparagus Salad w. Lemon and Feta
Serves 2

Ingredients:
1 bunch of asparagus
2 t. olive oil
juice and zest from 1 lemon
1/2 t. salt
1/4 t. pepper
1/3 c. reduced fat feta cheese

Directions:

  1. Trim the tough ends off the asparagus.
  2. Place asparagus on a baking sheet and sprinkle over the olive oil, salt and pepper. Place into preheated 400 degree oven. Bake for 10 minutes or until fork tender and some areas on the asparagus are slightly browned. Note: grilled asparagus would be great too.
  3. Once the asparagus is cooked, cut into bite size pieces – about an inch long.
  4. Zest and juice 1 lemon.
  5. Place the cut asparagus, lemon juice and zest (use less lemon if you don’t like a lot of acid) and toss with the feta.
